Mint to Be

I made this juice last week but forgot to post it sooo, hello from last Thursday! This one was so delicious. As I’ve said before I’m really into green juice lately. I’m getting tired of the same root vegetables, and my all my favourite fruits are still not quite in season, so green juice is a great compromise for me! I’ve been striving towards being as healthy as possible before the wedding (and in general), and green juice is a great way to get some vitamins and minerals in, rather than eating a bunch of junk food. Don’t get me wrong, I’m all for the snack lyfe, but moderation is key. For instance, I’m eating leftover pizza as I type this, but I also ate healthy fruits and vegetables all day. It’s all about the balance.

I think because I used an entire bunch of spinach, this juice was basically glowing green. I was a little worried about mixing lime, ginger, and mint together, but it ended up tasting really good. They’re all fairly strong flavours but they worked so well together, especially with the cucumber and pear to balance it out.

This made enough for 2 and a bit. Wash everything, peel the limes (and ginger if you’re feeling ambitious) and you’re all set. Because I don’t have the best juicer, I will bundle up the leafy greens and other soft ingredients between the harder ingredients so they go through a bit better. Do whatever works for you!

  • 3 pears
  • 1/2 a cucumber
  • 1 bunch of spinach
  • a knob of ginger
  • 5/6 sprigs of mint
  • 2 limes

Spinach is super rich in calcium, magnesium, phosphorus, potassium, sodium, folate, and vitamin A, making it good for your hair, skin, bones, and blood pressure. Pears add additional potassium, vitamin A, and trace amounts of other vitamins and minerals. Cucumbers, which are predominantly made up of water, are a great hydrator to add to any juice, and contain small amounts of all the good stuff. All in all, full of good stuff, tastes great, 10/10.
