Drop the Beet

Hi from Smithers! I’m here for a week visiting my mom (and my sweet pup). I rarely go on vacation, so this will be a nice break before the hands-on wedding planning begins!


This might be my new all time favourite juice. Not only is it perfectly sweet, but it has such a beautiful colour. Esrah and I couldn’t get enough! I have ruined many articles of clothing, tea towels, and countertops with beets. And yet, I keep coming back for more. They have such a deep, earthy taste, which balances the pineapple in this juice really well.


If you prefer your juice to be less sweet, I would make this with just one apple, or no apple at all. I’ve been making more savoury juices lately, so this was a nice change of pace. Wash everything, peel the citrus and the pineapple, remove the seeds from the apple. This made enough for two.

  • 2 small beets
  • 1/4 pineapple
  • 2 apples
  • 1 orange
  • 1/2 lemon
  • thumb of ginger


As per usual, this juice is full of potassium, Vitamin C, and Vitamin A. I can’t get enough of ginger lately, which is great because it is full of antioxidants and anti-inflammatory properties (I can’t talk ginger up enough. Seriously – put it in everything).
